And if you haven’t seen the documentary, I cannot recommend it enough. It’s a life changer! Here’s an overview:&lt;/p&gt;

&lt;p&gt;Totally forgot to take a photo of the mock mash. By the time I remembered it was all gone!! Been trying to perfect the recipe and I think I have it and I&amp;#8217;m sharing it to all of you!!&lt;/p&gt;
&lt;p&gt;1 large cauliflower head&lt;/p&gt;
&lt;p&gt;1 packet of veggie flavor boost packet&lt;/p&gt;
&lt;p&gt;water&lt;/p&gt;
&lt;p&gt;2 Laughing Cow garilc and herb wedges (light)&lt;/p&gt;
&lt;p&gt;1 tsp smart balance&lt;/p&gt;
&lt;p&gt;garlic powder&lt;/p&gt;
&lt;p&gt;salt &lt;/p&gt;
&lt;p&gt;pepper&lt;/p&gt;
&lt;p&gt;Boil water with veggie packet. Cut up cauliflower. Put into boiling veggie water for about 10 mins (longer if you can&amp;#8217;t easily put a fork through it). Drain. Get most water out. Or else your mash will be runny. Put in large bowl (while hot) add wedges and smart balance. Mash with potato masher or if you want it smoother use a food processor. Add spices to taste.&lt;/p&gt;
&lt;p&gt;Serves 4&lt;/p&gt;
