
Totally forgot to take a photo of the mock mash. By the time I remembered it was all gone!! Been trying to perfect the recipe and I think I have it and I’m sharing it to all of you!!
1 large cauliflower head
1 packet of veggie flavor boost packet
water
2 Laughing Cow garilc and herb wedges (light)
1 tsp smart balance
garlic powder
salt
pepper
Boil water with veggie packet. Cut up cauliflower. Put into boiling veggie water for about 10 mins (longer if you can’t easily put a fork through it). Drain. Get most water out. Or else your mash will be runny. Put in large bowl (while hot) add wedges and smart balance. Mash with potato masher or if you want it smoother use a food processor. Add spices to taste.
Serves 4

After many days of research…I gave in and finally got one. Today I’m spending lots of time getting familiar with it. Tomorrow is the start my May Birthday Month Challenge. I am going to hit my Fuelband goal everyday in May. I was to look super fab during my birthday month!! I can’t wait to start.

The basil is from my garden and the strawberries are from a local grower. Honey is raw. :) so yummy.
I also have some herbs from my garden brewing in my tea pot for iced tea.

Here’s my second attempt at making cauliflower rice. My first attempt was a little too involved, but this time I adapted this recipe from Elana’s Pantry. This version doesn’t require you to nuke the cauliflower and then fry it. Any way I can save steps is fricking awesome when I’m trying…

Hey guys…I am so tired of making salads for lunch. For the most part I’m 90% plant based and 10% occasional fish or eggs. I also don’t do dairy. I need something easy to make. I have about 15mins every morning. Any suggestions? or blogs to follow?
